Preheat oven to 425 degrees. With point of sharp knife, cut small slits into meat and insert garlic slivers. Brush meat with olive oil and salt/pepper. Place meat on rack in shallow roasting pan. Roast for 15 minutes. Reduce to 350 degrees and roast 20 mins more. Cut and cook 5-10 mins more. Set at room temperature 20 mins. Cut in 1/2 inch slices.
