2 large sweet potatoes (peeled, and sliced in thin French

2-3 tbsp. olive oil

1/3 cup olive oil

Salt and pepper (to taste)

2 large cloves garlic (minced)

1 tablespoon dried parsley

1/4 cup fresh chives (sliced)

1/2 tsp. dried thyme

1/2 tsp. dried rosemary

1 tablespoon dried basil

1/2 tsp. dried oregano

16 oz. ctn. vegetable broth

3 cups almond milk

fresh thyme oregano, basil or rosemary, for garnish (if desired )

1/2 cup roasted sweet potatoes (for garnish if desired)

fresh parmesan cheese shavings (for garnish if desired)
