Roasted Red Potatoes

Ingredients

2 pounds red potatoes cut in evenly-sized pieces

salt pepper cayenne to taste

thyme sprigs add whole and remove barren twigs after cooked

1/4 to 1/3 cup olive oil

1/2 large red bell pepper seeded, cut in chunks


Directions

1. In large roasting pan, toss all ingredients in olive oil. 2. Roast at 400 degrees for 30 minutes. Toss potatoes. 3. Roast for another 20 minutes. Toss potatoes. Try to put whiter sides down. 4. Roast for another 15 minutes. Turn off heat and leave potatoes in the oven for 15 minutes. Adjust seasoning if necessary.
