Rustic Fish Stew

Ingredients

1 14.5-oz can Diced tomatoes italian-style

1 tb olive oil

1/2 c Onions chopped

3 large cloves garlic minced

1/2 ts Dried thyme leaves

1 small Sm zucchini cut in 1/4 inch Dice (about 1 cup)

1 Red bell pepper cut in 1/4 Inch dice, (about 1 cup)

Salt, pepper

1 lb Tilapia fillets cut in 8 pc

1 c Clam juice

1 c Dry white wine


Directions

Heat oil in a large, non-stick skillet. Saute onion and garlic over medium-high heat for 3 minutes, until just starting to soften. Add bell pepper, succhini, thyme, salt and pepper; saute 3 minutes longer. Add tomatoes with their juice, clam juice and wine. bring to a boil, reduce heat and simmer for 5 minutes. Add fish fillets and simmer 3-5 minutes, until fish is cooked through. Serve in shallow soup bowls with crusty bread. Columbus Ledger-Enquirer

This recipe was a huge hit with my extended family. I added fresh clams and fresh oysters, as well as fresh salmon and ling cod.

Very good, quick and easy. When I tasted it before serving it was a little bland. I didn't have Italian diced tomatoes, maybe that's why. I had already doubled the thyme so I added Worcestershire sauce. The next time I make this I will double the garlic, and maybe marinate the fish in lime juice, and add chicken broth.

I fixed this dish for dinner tonight. I added a teaspoon of creole seasoning and added clams n mussels. It was wonderful!

I served with 3 slices of baked potatoes in the bottom of the bowl on each serving. It was a hit!Great recipe!
