Salsa X-Ni-Pek or Sauce Hot Enough To Heat a Dogs Nose -Ww

Ingredients

1/2 c Fresh cilantro; loosely

1 c Yellow tomatoes*; finely

1/2 c Red onion; minced

1 tb Fresh lime juice

1 tb Grapefruit juice

2 tb Fresh orange juice

1 md Habanero pepper; cored and

1/2 ts Grated orange zest


Directions

In small bowl, combine tomatoes, onion, cilantro, pepper, zest and orange, lime and grapefruit juices; let stand 30 minutes, until flavors are blended. EACH SERVING (1/4 CUP) PROVIDES: 3/4 Vegetable, 5 Optional Calories PER SERVING: 17 Calories, 0 g Total Fat, 0 g Saturated Fat, 0 mg Cholesterol, 5 mg Sodium, 4 g Total Carbohydrate, 1 g Dietary Fiber, 1 g Protein, 9 mg Calcium * Yellow tomatoes give this sauce a gorgeous color, but if they are not available use red ones. If habanero peppers are not available, substitute 2 medium serrano peppers. The zest of the orange is the peel without any of the pith (white membrane).
