Directions

Place tapioca and 2 cups water into medium heavy bottomed saucepan and let soak for 30 mins. Add coconut milk and sugar; bring to boil over medium heat, stirring constantly. Reduce heat to a summer and cook about 15 mins, or until tapioca is translucent, stirring frequently to prevent scorching. Stir in lemon juice and garnish flakes.
