San Francisco Eggplant with Basil

Ingredients

1/2 medium chopped

1/2 medium chopped

7 cloves minced

3 dried red chili peppers minced

3 slices minced

1 Tbsp or handful fresh, chopped

2 Tbsp

2 large Chinese eggplants cut in bite sized pieces

1 Tbsp

1 Tbsp soy sauce or Golden Mountain Seasoning Sauce

1 Tbsp

1 Tbsp cooking sherry

1 tsp


Directions

1. mix sauce ingredients (fish sauce, soy sauce, lime juice, sherry, sugar) and set aside 2. Heat oil in wok, stir in onions, followed by bell peppers. 3. stir in scallions, chili, garlic, ginger 4. Add eggplant and cook a few minutes, adding drops moisture when needed 5. Add sauce ingredients and stir in basil 6. Mix well and serve over rice
