I actually made this dish from scratch because i had a left over can of Strongbow in the fridge and i couldnt find a decent sausage & cider casserole on the internet. Its a nice warm dish perfect for during the Autumn months, even though i actually made it at the start of summer. You can serve it with what you like, but i'd suggest mash.

750 grams Sausages (12 – 15 sausages) good quality
2 slices Bacon (up to 3 slices), chopped
1 desert apple (cut into wedges, skin kept on)
2/3 Carrots (peeled and chopped)
1 large Onion (finely chopped)
Oil (for frying)
500 milliliters apple Cider (1 can), Strongbow/Magners
500 milliliters chicken stock.
Dear Professor Strongbow We've made this casserole a couple of times now and it's fantastic! Couple of quick suggestions, though: prepare the meal in a casserole dish rather than saucepans - it cuts down on the washing up and you can put it straight in the oven. Also, add a tin of chopped tomatoes to it as that makes it taste even better. Either way, each time we've eaten this, we've ended up with a happy casserole face!

Reilly08Id suggest cooking the sausages in a different pan to the onions and sausages. When i made this, i made a school boy error of frying the sausages in the saucepan. The onions and bacon started to burn and the sausages were frying quick enough, so in the end i add the rest of the ingredients. The meal turned out fine but the sausages didnt have that beautiful golden look or slightly crisp texture, which was a shame. Still, gotta learn from it! [I posted this recipe.]
