Sausage Pancake Muffins

There's nothing like one of those big old-fashioned breakfasts that Mom used to make. You know, a plate filled with scrambled eggs, pancakes with syrup and bacon or sausage. But honestly, who has the time to make all that? Now YOU do! Try these delicious little morsels of breakfasty yumminess and watch how quickly they vanish off your family's breakfast table!

Ingredients

3/4 cup milk

2 tablespoons melted butter slightly cooled

1 large egg

1/2 teaspoon vanilla

2 tablespoons maple syrup

1 tablespoon sugar

1 cup flour

2 teaspoons baking powder

1/4 teaspoon salt

10 sausage links cooked and cut into 3 pieces each


Directions

Preheat oven to 350F. Lightly grease mini muffin pans. In a large mixing bowl, whisk together milk, butter, egg, vanilla, and maple syrup. Add sugar, flour, baking powder and salt. Scoop 1 tablespoon of batter into each muffin cup. Place one slice of sausage link into the center of each muffin. Bake for 10-12 minutes. Serve with butter and maple syrup. Makes approximately 30 mini muffins

What a neat idea! So quick and easy to whip up for a mom on the go. Everybody knows how great pancakes, sausages and maple syrup are together, making them portable is a stroke of genius. My kids are wild for these; I have to make them every week or risk mutiny! A+
