Savoury Carrot Muffims

Ingredients

1 c Grated mature cheese

2 Eggs

; Glaze

2 c milk

1 pk Produce Partners Honey

1 c Yoghurt

3 c Self-raising flour

2 Carrots; peeled and grated


Directions

1. In a large mixing bowl combine the packet contents, flour, grated cheese and carrots, then mix well. 2. Beat together the eggs and yoghurt and stir into the centre of the mix. Fold in 1 cup milk, continue adding milk until mixture is a soft dropping consistency. 3. Fill greased muffin tin 2/3 full with mixture. 4. Bake in a moderately hot oven (190C) for 22 to 25 minutes until golden and firm. 5. Serve warm or cold with butter or on its own with soup or salad. Makes 12.
