Scott Theeringer's Grilled Chicken Breast with Cantaloupe Salsa

Great summer recipe, the salsa is a nice sweet twist on the traditional barbecue grilling menu.

Ingredients

4 large boneless skinless chicken breasts roughly 2 lbs

1 large cantaloupe

2 large Roma tomatoes

1/2 white onion

1 cup cilantro finely chopped


Directions

Prepare salsa first and chill for 1/2 hour before grilling chicken. Cantaloupe Salsa: Cut and cube entire cantaloupe, place in large bowl. Dice Roma tomatoes and add to the cantaloupe Finely dice the 1/2 white onion and Cilantro, add to cantaloupe mixture. Place in fridge to chill for thirty minutes. Chicken: Pre-heat grill. Take boneless, skinless chicken breasts and trim any remaining fat Place on grill 8-12 minutes depending on size and thickness, make sure to flip chicken halway through to ensure both sides are done. Remove chicken from grill and place on plate. Spoon the chilled cantaloupe mixture evenly onto grilled chicken and serve immediately.

This recipe was great for using cantaloupe in a different way. I felt.it needed acid and heat as well as a little more crunch. I added lime juice and next time I'll use a jalapeno or some other pepper to add some spice.

Total time is 60 minutes because of the time it takes the cantalopue salsa to chill and flavors to mix in the fridge. [I posted this recipe.]
