Ingredients

4 teaspoons extra-virgin olive oil divided

10 ounces mushrooms sliced

2 cups thinly sliced leeks white and light green parts only (about 2)

1/4 cup brandy or dry vermouth

1/4 cup reduced-sodium chicken broth

3 tablespoons reduced-fat sour cream

1 tablespoon chopped fresh parsley

1/2 teaspoon salt divided

Freshly ground pepper to taste

1 pound large dry sea scallops (see Note)

The sauce was just pretty good. Next time, I think I'd start with butter instead of oil. And I would stir some flour into the sour cream before adding it to the sauce and cook it a little to thicken it up. It needed some body. I'd leave it simmering while preparing the scallops. The scallops were great.
