Ingredients

700 g glutinous rice flour

300 g sesame powder or finely ground sesame seeds

750 g Powdered sugar

50 g maltose syrup

80 g vegetable oil

120 g water

65 g walnuts (optional)

65 g pine nuts (optional)


Directions

1. To make the sugar syrup, mix together sugar, oil, water, and 30 g maltose. Stir well and let it stand overnight or for at least 8 hours. 2. sift rice flour and sesame powder into a bowl. Mix well. Then pour in the sugar syrup. using your hands, rub the two together until crumbs form. 3.run the mixture through a sieve and set aside 4. Mix the cooked nuts with 20 g of maltose and 50 g of the mixture from step 3 4. Into a rectangular pan, pour in half of the remaining mixture from step 3. On top of that, pour in the nut mixture from step 4, distributing it evenly around the pan. Finally, pour the remaining mixture from step 3 on top. 5. flatten and compress the surface of the mixture. 6. into a pot or deep pan. Pour in water around the pot. let it boil, before lowering the temperature to low. 7. once the pot stops boiling, set the pan inside. 8. Steam for 2 minutes. 9. immediately, flip the pan over, so that the rectangular cake is inverted onto a plate. Then steam it for 3-5 minutes. 10. while the cake is still hot, generously sprinkle cooked rice flour over the top. 11. After letting it completely cool, cut it into thin slices.
