Shepherd Pie

Ingredients

500 g lean beef minced

3 tablespoon extra-virgin olive oil

2 cloves garlic peeled and minced

4 large spring onions chopped

2 medium carrots chopped

1 large celery stalk chopped

1 tablespoon paprika

1/4 teaspoon crushed chilli flakes

1 large pinch ground cinnamon

1 large pinch ground cloves

salt and pepper to taste

1/2 cup beef stock

2 tablespoons dry red wine

500 g potato peeled, cooked and mashed

1/4 cup cheddar or parmesan cheese grated


Directions

Heat an oven to 180 deg C. Peel and chop the potatoes and microwave or boil till cooked through and soft. Drain and mash and mix in 2 tablespoons of olive oil. Peel and chop the rest of the vegetables and garlic. Heat !.5 tablespoons of olive oil in a skillet and add the vegetables (not potato) and garlic and cook for a few minutes. Add the minced beef and cook it till brown. Add the seasonings, stock and wine and simmer for a few minutes. Oil a large pie or casserole dish with the remaining oil and put the meat mix in it. Cover the top of it with the mashed potato and then sprinkle over the cheese. Cook the dish open in the oven for 30 minutes or until the top is nicely browned. Serve.
