Shredded Carrot Salad

Ingredients

2 tablespoons olive oil

1 large shallot diced small

1/4 teaspoon fennel seed

1/4 teaspoon cumin

kosher salt

fresh ground pepper

1 10 ounce bag shredded carrots

1 lime juiced (3 tablespoons)


Directions

In a small skillet heat olive oil over medium heat. Add the shallot and cook until softened, 8 minutes. Add fennel seed and cumin and cook for an additional minute. In a medium bowl, toss together the carrots, fresh lime juice and shallot mixture. Season with salt and pepper. Toss to coat.
