Shrimp and cucumber salad with lime, chili and cilantro dressing

Ingredients

3 tbsp fresh lime juice

1/2 tsp hot asian-style chili sauce or to taste

2 tsp honey

1 tsp Dijon mustard

1 tsp fresh ginger finely grated

1 1/2 tbsp vegetable oil

1/4 cup fresh cilantro chopped

250 grams small cooked salad shrimp patted dry

1 small to medium English cucumber halved lengthwise and thinly sliced

1/2 cup unsalted, roasted cashews

1/2 small red onion thinly sliced

12 or more leaves butter or leaf lettuce


Directions

Place the lime juice, chili sauce, honey, mustard and ginger in a salad bowl and whisk to combine. Slowly whisk in the oil and then mix in the cilantro. Ad the shrimp, cucumber, cashews, onions and toss to combine. Line a serving plat with lettuce and mound the salad in the centre.
