Shrimp Fried Rice

Ingredients

2 Eggs

2 tb Vegetable oil

3 Green onions & tops; chopped

3 c Cold cooked rice

1/4 lb shrimp Cooked, chopped

3 tb Soy Sauce (such as Kikkoman)


Directions

Blend eggs with 2 Tbsp. water; set aside. Heat oil in wok or large skillet over medium heat. Add green onions; stir-fry 30 seconds. Add eggs; cook, stirring gently, until firm. Stir in rice and cook until heated, gently separating grains. Add shrimp and soy sauce; cook, stirring, until mixture is well blended and heated through. Super! Sauteed the shrimp in butter and garlic. Added hoisin sauce and a dash of liquid smoke. Peas, corn or other chopped veggies would be fantastic in this.

Simple and quick recipe. I added some finely chopped bell peppers and minced garlic. I used steps from steps another recipe on here to add flavor to the shrimp. I mixed 1 tbsp of brown sugar and 1 tbsp of kosher salt in a bowl. Added shrimp to the mixture, then refrigerate for 45 minutes. Rinse the shrimp throughly (otherwise it would be salty). All other steps were exactly as the recipe required and it came out perfect and flavorful. Two thumbs up!!!
