Ingredients

10 each Shrimp

1/4 cup Cream

2 tablespoons Olive Oil

1 cup Flour, All-purpose

1 each Egg Yolk

2 tablespoons Butter

3 each Garlic Cloves minced

1 each Lemon juiced

1/8 cup Parsley chopped

1/8 cup Chives chopped

2 servings Spaghetti


Directions

Joe Paesano's wife stole this prior to their divorce she then proceeded to give it to anyone who would take it. Peel and de-vain shrimp. Soak shrimp in cream diluted with water by half. soak for 30 minutes. Pre-Heat oven to 400 degrees. While shrimp are soaking put salted water on for speghetti and begin to heat to a boil. prep rest of ingrdients, seperate egg yoke, juice lemon, and mince garlic and place aside. Put flour in a dish for dredging. Heat olive oil and add butter to oil. Remove shrimp from cream and roll shrimp in flour and saute in oil over medium heat for 5 minutes. Do not turn shrimp.After 5 minutes remove shrimp from saute pan and place in baking dish with saute side down. Place baking dish in oven and turn to broil. Broil shrimp for 5 minutes. Before placing shrimp in oven put spaghetti in boiling water for 9 minutes stirring as needed. When there is about two minutes left on shrimp heat skillet that the shrimp was saute in and add half the butter, the egg yoke, lemon juice and the cream the shrimp soaked in, whisking constantly until butter is melted. Remove from heat and add the remaining butter and the minced garlic continuing to whisk until butter is melted. Set aside. When shrimp are finished cooking, pour sauce into the bottom of plate. Place the shrimp in the sauce on half the plate. Strain the pasta and place on the other half. Sprinkle with the chopped parsley and serve with grated parmesan cheese.
