Shrimp with Tomatoes and Feta Recipe

3 tablespoons olive oil

2 shallots, finely chopped

2 garlic cloves minced

6 plum tomatoes chopped

1/2 cup white wine or chicken broth

1 tablespoon dried oregano

1/2 teaspoon salt

1/2 teaspoon crushed red pepper flakes

1/4 teaspoon sweet paprika

2 pounds uncooked large shrimp peeled and deveined

2/3 cup crumbled feta cheese

2 teaspoons minced fresh mint
