Slow Cooker Barbecued Beef

This recipe is from the 'Slow Cooker Recipe Collection' cook book. My family has become extremely picky when it comes to crockpot recipes, but crockpots use very little electricity, and cheaper cuts of meat can be used for the recipes. This one was a hit. It can be put together the evening before cooking, and cook during the day while you're at work. Very easy!

Ingredients

3 lb. Boneless chuck roast trim the fat from the roast

1 1/2 cups Ketchup

1/4 cup Brown sugar packed

1/4 cup Red wine vinegar

2 tablespoon Dijon mustard

1 teaspoon Liquid smoke

1/2 teaspoon Salt

1/4 teaspoon Black pepper

1/4 teaspoon Garlic powder

2 tablespoon Worcestershire Sauce

sandwich buns

Directions

Place the roast in a 3.5 quart or larger crockpot. Combine remaining ingredients in a large bowl and whisk to mix. Pour sauce mixture over the roast. Cover and cook on low for 8-10 hours, or 4-5 hours on high. When the roast is fork tender, skim and remove the grease with a large spoon. Remove the roast from the crockpot, and shred it with a fork. Place the shredded meat back into the sauce in the crockpot, and stir to evenly coat the meat with the sauce. Spoon meat onto sandwich buns, and top with additional sauce, if desired.

I cooked on high to just four hours, and it was already tough. Could be the type of meat, could be the slow cooker... but I also had to slice it instead of get it to shred. The flavour is there, but unfortunately the meat is too tough to really enjoy. I am guessing I need to watch more closely to gage tenderness and the right time to stop and shred.

I don't know if it was my cut of beef or what, but I had a very hard time getting the meat to shred. I ended up having to cut it into slices and serve it like that.

The recipe is absolutely delicious. My family really enjoyed it. Even my son who is a very picky eater had a third helping. Thank you!
