1 lb Chicken cooked and shredded
15 ounce can Whole, Peeled Tomatoes mashed
10 ounce can Enchilada Sauce
1 Onion chopped
4 ounce can Chopped Green Chile Peppers
2 cloves Garlic minced
14.5 ounce can Chicken Broth
1 tsp Cumin
1 tsp Chili Powder
1 tsp Salt
1/4 tsp Black Pepper
1 Bay Leaf
10 ounce pkg Frozen Corn
1 tbsp Fresh Cilantro chopped
I fell in love with chicken tortilla soup and was looking for a good slow cooker version, and this one was pretty good. I tweeked it a bit by adding one can of chicken broth, and one can of water (personally, I like mine soupy). I have little children so I didn't make it spicy like I normally like it, but i could use a bit more chili powder and I should've used another can of chicken broth instead of water to give it a bit more flavor. To top it off, I used shredded cheese and crunched up tostidos on top. So Good! I would definitly make it again!

jafkitchenMy 4 yr old loved it! We added about 2 cups of water (it's missing from ingredient list) and drained a can of pinto beans. Also added extra chili powder after test taste. Topped with a dollop of sour cream and avocado to cut spice for her. Also added tortilla strips which is also missing from ingredients. Found original on allergies.com
