Slow-Cooker Chicken Tortilla Soup

Ingredients

1 lb Chicken cooked and shredded

15 ounce can Whole, Peeled Tomatoes mashed

10 ounce can Enchilada Sauce

1 Onion chopped

4 ounce can Chopped Green Chile Peppers

2 cloves Garlic minced

14.5 ounce can Chicken Broth

1 tsp Cumin

1 tsp Chili Powder

1 tsp Salt

1/4 tsp Black Pepper

1 Bay Leaf

10 ounce pkg Frozen Corn

1 tbsp Fresh Cilantro chopped


Directions

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover and cook on Low setting for 6-8 hours or on High setting for 3-4 hours.

I fell in love with chicken tortilla soup and was looking for a good slow cooker version, and this one was pretty good. I tweeked it a bit by adding one can of chicken broth, and one can of water (personally, I like mine soupy). I have little children so I didn't make it spicy like I normally like it, but i could use a bit more chili powder and I should've used another can of chicken broth instead of water to give it a bit more flavor. To top it off, I used shredded cheese and crunched up tostidos on top. So Good! I would definitly make it again!

Could use some more spice...but excellent recipe

My 4 yr old loved it! We added about 2 cups of water (it's missing from ingredient list) and drained a can of pinto beans. Also added extra chili powder after test taste. Topped with a dollop of sour cream and avocado to cut spice for her. Also added tortilla strips which is also missing from ingredients. Found original on allergies.com

So delicious! I added pinto beans and topped it with cheese, sour cream and tortilla chips. Was a definite hit!
