Slow Cooker Chicken Tortilla Soup

Ingredients

1 lb chicken breast

15 oz chicken broth

1 cup water

15 oz can corn

10 oz can Rotel Diced Tomatoes and Green Chiles

1 yellow onion diced

1 tbsp minced garlic

10 oz enchilada sauce

2 tbsp taco seasoning

1 tsp chili powder

1 tsp salt

1/2 tsp pepper

Toppings (optional)

tortilla strips

shredded cheese

sour cream

chopped cilantro


Directions

To a slow cooker, add all of the ingredients except the toppings. Cook on LOW for 7-8 hours or HIGH for 6 hours, until the chicken is cooked. Remove the cooked chicken from the slow cooker and shred. Place back into slow cooker and stir. Serve and top with toppings of your choice. Enjoy!
