Slow Roasted Pairie Chicken/Turkey/Woodpecker/Lizard

START THE DAY PRIOR TO ROASTING - YOU WILL BE LEAVING THE BIRD IN THE FRIDGE OVERNIGHT.

Ingredients

3 teaspoons Salt

3 teaspoons Paprika

1 teaspoon Cayenne Pepper

1 1/2 teaspoons Onion Powder

1 teaspoon Ground Thyme

1 teaspoon Black Pepper

1 teaspoon Garlic Powder

1 teaspoon Celery Salt

2 Cup Fresh Onion


Directions

Combine all spices. Rinse and clean chicken/turkey and pat dry inside and out. When it is dry, put chicken/turkey into a large plastic bag big enough to be able to seal the bag. If the bird is too big then use a kitchen trash bag (Non-Scented of course). Now spoon in the spice rub and sprinkle all parts of chicken inside and out. Put a whole chopped onion into cavity and seal the bag. Now you can rub down the chicken/turkey rubbing in the spices. Once that is done put the chicken/turkey into the refridgerator overnight. When you are ready to cook put the bird into a roasting pan. Set oven to 275 and cook uncovered for about 5+ hours basting normally with juices and/or add a half stick of real butter. You can tell when bird is done when legs move in socket very easily. The bird will turn brown, and even be dark brown but no worries, that seals in the juice and tastes great.
