South Western Pinto Beans

Ingredients

2 1/2 Cups sifted to remove rocks/bad beans

1/2 pound cut into 1/2 inch pieces

2 cups chopped

3 cloves minced

2 8 ounce cans

2-3 tablespoons

1/2 teaspoon

1/2 teaspoon

1/4 teaspoon

1/8 teaspoon


Directions

Sort through and wash beans then soak beans over night as directed on package, DO NOT DRAIN. Cover and simmer beans for 3 to 31/2 hours until tender but not mushy. In a large skillet cook bacon, onions and garlic over medium heat until bacon is just crisp(do not drain) Add bacon mixture, tomato sauce, chili powder, oregano, salt and pepper, and cumin to beans. Stir well. Simmer uncovered and additional 20 - 30 minutes. Serve hot on or with Corn bread.
