South Western Tortilla Soup

Garnish with mozzarella, avocado, sour cream and lime wedges.

Ingredients

2 Chicken breasts

1 Small onion chopped

2 tablespoons Olive oil

1 28-ounce can chopped tomatoes

1 15-ounce can black beans drained

1 teaspoon Chili powder

1 teaspoon Worcestershire sauce

2 tablespoons Fresh Cilantro chopped

Pepper to taste

Not too many Tortilla chips crushed

2 cups Shredded mozzarella

1 Lime juiced

1 Clove of garlic minced

1 4-ounce can green chillies chopped

3 cups Tomato juice

3 cups Chicken broth

Mozzarella grated, Avacado Lime sliced, sour cream


Directions

Cut chicken into bite size pieces; rince, pat dry. Sauté chicken, onion, and garlic in olive oil in large stockpot until chicken is tender. Add next 9 ingredients. Bring to a boil; reduce heat. Simmer for 1 hour. Add cilantro and pepper. Simmer 30 minutes. Ladle over tortilla chips/cheese in soup bowls. Squeeze lime juice over soup. Garnish with limes.
