Southern Style Cornbread Dressing

Turkey's best friend is this stuffing. It's the bomb!

Ingredients

2 (81/2 oz.) pkgs. Jiffy Corn Muffin/Corn Bread Mix

2 large Eggs

2/3 cup milk

1/4 loaf (6 slices) oven dried white bread, cubed

1 sleeve saltine crackers, crushed

1/2 large green bell pepper, cored and chopped

1 medium onion, peeled and diced

1 can cream of mushroom soup, undiluted

1 can cream of celery soup

6-7 cups fresh chicken stock

3-4 large Eggs

Sage to taste

Rosemary to taste

1 stick melted butter


Directions

For Cornbread: Mix all ingredients until well. Pour into well greased 8.5x4.5x2.5 inch loaf pan. Bake at preheated 400 degree oven for 30 minutes or until inserted tootpick comes out clean. Cool completely. Crumble into large bowl. For Dressing: Saute bell pepper and onion in butter until opaque. Add into bowl with cornbread. Mix in remaining ingredients until well. Spoon into greased baking dish and spread evenly. Refrigerate overnight. Bake @ 350 for 1 hour or until firm. Place under broiler for 1-2 minutes to brown.
