Southwestern Black Beans

Ingredients

1 can (16 oz) Black beans

1/2 Green Pepper chopped

1/4 cup Corn

1 Tomato chopped

1/4 cup Red Onion chopped

3 tablespoon Lime Juice

1 tablespoon Canola Oil

1 tablespoon White Wine Vinegar

1 tablespoon Soy sauce

1 teaspoon Honey

2 teaspoon Chili powder

2 teaspoon Garlic powder

Pepper ground


Directions

In a bowl combine the beans, green peppers, corn, tomatoes and onions. Set aside. In a small bowl or cup, mix the lime juice, oil, vinegar, soy sauce, honey, chili powder, garlic powder, black powder. Pour over bean mixture and marinate at room temperature.

Very colorful and easy dish to make. My only reason for four stars is I'm not sure the marinade is all that great. If trying this recipe you might want to experiment with taco seasoning or a chile-lime dressing instead.
