Soutwestern Gazpacho Salad

This is a light and fresh recipe full of color and flavor! Great for picnics or cookouts!

Ingredients

1 can use green if have on hand

1 cucumber peeled and chopped

1 small onion chopped

1 lb tomatoes chopped

1 zucchini chopped

1 can diced banana peppers 4 oz. can, drained, can also use pepperoncinis

2 tbsp. cilantro minced

2 tbsp. rice wine vinegar may use whatever vinegar you have on hand

2 tbsp. vegetable oil

salt; to taste

fresh ground pepper; to taste


Directions

Combine all ingredients in a medium to large bowl except the salt. Cover and refrigerate for approximately 4 hours stirring occasionally (Just to get it cold and let the flavors mix and mingle). When ready, season with salt and drain if necessary.

You can eat this straight away after making, but it does taste even better after it''s been cooled in the refrigerator. You can definitely add or take away anything to your liking. Have fun with it! It is a great snack with chips and crackers, or also very good paired along with a grilled protein. [I posted this recipe.]
