1 lb tomatoes chopped
1 zucchini chopped
1 can diced banana peppers 4 oz. can, drained, can also use pepperoncinis
2 tbsp. cilantro minced
2 tbsp. rice wine vinegar may use whatever vinegar you have on hand
2 tbsp. vegetable oil
salt; to taste
fresh ground pepper; to taste

KconleyYou can eat this straight away after making, but it does taste even better after it''s been cooled in the refrigerator. You can definitely add or take away anything to your liking. Have fun with it! It is a great snack with chips and crackers, or also very good paired along with a grilled protein. [I posted this recipe.]
