Spaghetti Squash

Ingredients

1 medium spaghetti squash(about 3 lbs) halved and seeded

2 tsp olive oil

1 med onion minced

1 shallot minced

1 clove garlic minced

1/2 cup pine nuts

2 Tbsp fresh Romano Cheese grated

1/8 - 1/4 tsp red pepper flakes crushed

1 Tbsp fresh sage minced

salt & pepper to taste

1 large plum tomato diced


Directions

1 . Preheat oven to 400 F. Place squash halve cut side down on baking sheet. Roast for approx. 40 minutes or until tender. 2. Meanwhile, heat olive oil in a skillet over medium heat. Add onion, shallot and garlic, saute for 4 minutes. Add pine nuts and cook for 2 minutes until lightly browned. Set aside. 3. When squash is cooked, turn halves cut side up. With a pasta rake, fork or large spoon scoop the flesh from the shell. Put squash in a large bowl. Drain any liquid. Add pine nut and onion mixture, cheese, sage, red pepper and salt and pepper.
