Spam Veggie Pita Pockets

Ingredients

1/3 c Chopped cucumber

1 c Chopped cauliflower

1 cn SPAM Luncheon Meat, cubed

1 c Chopped broccoli

1 Carrot, peeled and chopped

1 Tomato, chopped

1/3 c Onion finely chopped

4 Pita pocket breads, halved

1/2 c Italian salad dressing


Directions

STATE FAIR RECIPE Carol Green, Austin, MN. In bowl, combine SPAM, broccoli, cauliflower, tomato, carrot, cucumber, and onion. Toss with dressing. Cover and chill several hours. Spoon salad mixture into pocket bread.
