Spanish Rice

Ingredients

2 cups Long Grain Rice

3 cups Vegetable Stock

2 tablespoons Olive Oil

1/3 cup Tomato Paste

1/2 teaspoon Cumin Powder

1 teaspoon Chili Powder

1 teaspoon Paprika

1/2 teaspoon Garlic Powder

1 tablespoon Parsley (optional) chopped

Salt & Pepper to taste


Directions

In a medium saucepan heat oil over medium low heat add the rice and toast for about 1-2 minutes. Add the tomato paste, cumin, chili powder, paprika and garlic powder. Stir until the mixture is combined with the rice, about another 1-2 minutes. Lastly, add the vegetable stock and parsley. Stir until the mixture is incorporated. Simmer covered, over medium low heat until done, approximately 25 minutes. Remove lid, fluff with a fork and serve.
