Spinach Pasta with Asparagus Pesto

Ingredients

1 pound spinach fettuccine

1/4 cup pistachios OR

3 tablespoons pine nuts

1 pound thin asparagus

1/2 lemon juiced

1/2 cup olive oil

1/4-1/3 cup Parmesan reggiano

1 cup mixed fresh parsley, mint, and basil or tarragon loosely packed


Directions

Cook Pasta In skillet, toast pistachios or pine nuts use food processor to puree asparagus, herbs, cheese, nuts and lemon juice, season with salt and pepper. Whith the machine on, drizzle in a bout 1/4 cup of olive oil and then a few more tbsp. Use olive oil as needed to form a smooth pesto. In a pasta bowl combine the pasta, pesto and reserved pasta cooking water. Toss for 1 to 2 minutes to coat. serve
