Spinach Tortellini Soup with Sausage

Ingredients

3 quarts Costco chicken stock

1 pound Jimmy Dean mild sausage

9 ounce pkg Cheese Tortellini

10 ounce pkg Frozen chopped spinach thawed and squeezed

1 tablespoon Minced garlic

1 14.5 oz can Italian style diced tomatoes

1 tablespoon Basil

1 tablespoon Salt

1 tablespoon Pepper

Grated parmesan cheese

Directions

Brown sausage in large frying pan, then drain grease Heat stock in medium pot to a simmer over medium heat Add sausage, spinach, garlic, tomatoes, basil, salt and pepper and simmer about 1 hour Cook tortellini according to package directions Add tortellini to individual bowls and add soup Top with grated parmesan cheese
