Steak and Veggies with Chimichurri

Grilled steak, squash, and potatoes with cilantro-based sauce

Ingredients

2 pounds yukon gold potatoes cut in wedges

2 pounds beef filets - tenderloin or other

2 teaspoon salt

2 teaspoon pepper

4 cups yellow squash cut diagonally into 1/4 inch slices

6 bunches cilantro leaves

4 tablespoon chopped garlic

2/3 cup olive oil


Directions

1. Microwave potatoes on high for six minutes or until almost tender, in a bowl covered tightly in plastic wrap with a slit cup in wrap. 2. Sprinkle squash and steaks with salt and paper. 3. Finish potatoes on the grill; grill squash and steaks. 4. To make the chimichurri sauce: combine salt, pepper, cilantro and garlic in a food processor; pulse until finely chopped. Then add oil and process until smooth. 5. Service sauce with steak and veggies. 6. As a substitute, use premade pesto sauce instead of chimichurri sauce. Also, note that this recipe makes more sauce than you need for the dish, so you can have extra - it's so delish!
