Ingredients

1 pound extra lean ground beef

1 large Onion coarsley chopped

1 teaspoon ground allspice

4 medium green & red bell peppers cored, seeded, & cut into 1 inch chunks

1 28 oz can stewed tomatoes including juice

1 15 oz can low-sodium tomatoe sauce

3 beef bouillon cubes disolved in 1/2 cup hot water OR 3 tsps beef bouillon granules

2/3 cup uncooked long-grain white rice

1/4 to 1/2 teaspoon Black pepper to taste

1/4 teaspoon salt optional

1 to 2 teaspoons sugar to tast, optional


Directions

In a 4-quart or larger saucepan or pot over medium-high heat, combine the beef, onion, and allspice. Stir beef to break it up asmuch as possible, cook for 5 min until lightly browned Stir in the peppers, tomatoes, tomatoe sauce, buouillon-water mixture, rice & black pepper Bring to boil Adjust the heat so the stew simmers gently & cook, covered and stirring occasionally, 25-30 min or until the rice is just cooked through Taste and add salt and more papper, if desired If the stew has a noticeable acidity due to the tomatoes, also stir in a little sugar to taste
