Stirfried Greens

A perfect side dish for a vegan diet, or add chickpeas or tofu to make a main dish.

Ingredients

3 lbs mixed greens (chard collards, kale, etc), chopped

3 tbsp olive oil

1 tbsp garlic chopped

1 tbsp fresh ginger chopped

1/2 red pepper chopped

1/2 green pepper chopped

1/2 yellow pepper chopped

1/3 cup kombu or vegetable stoclk

1/4 cup rice wine vinegar

2 tbsp Bragg's Liquid Aminos


Directions

Heat 2T of the oil in a frypan over high heat. Cook onions until softened, then add peppers. Cook for about another 5 minutes until the edges start to char. Add greens, and cook until the volume decreases by about half. The greens should still be fairly crunch. Remove from pan and set aside. Add the remaining 1T olive oil to the pan and heat. Add garlic and ginger and cook for about 30 seconds. Add stock and vinegar and bring to boil. Continue boiling until liquid has reduced to about half. Add pepper/greens mixture back into the pan and mix to ensure garlic/ginger is spread evenly throughout. Add Bragg's, stir, and serve hot!

It's pretty good and quick and healthy. The instructions say to put in onions but the ingredients don't list onions, so I wasn't sure how many to use. I used about half an onion. I used soy sauce instead of Braggs. It says to use a frypan, but 3 lbs is a lot of greens. I would recommend using a dutch oven with a wide base.
