Stoby's Cheese Dip

This is a cheese dip from a local restaurant that we cloned. I have gotten nothing but rave reviews from those who have tried it.

Ingredients

2 cups Water

1 cup Coffee creamer

1 pound Velveeta cubed

1/4 teaspoon Garlic powder

1 teaspoon Onion powder

1 teaspoon Ground cumin

2 teaspoon Dry mustard

1/2 cup Flour

1 teaspoon Lemon juice optional

3/4 cup Salsa optional

1/3 cup Chili without beans


Directions

Blend all ingredients except cheese in a blender. Add to large pot on medium heat. Add cubed cheese. Stir often until cheese is melted. Cheese dip will thicken as it cooks.

I went to High School in Conway with Mr Stobaugh's daughter. We used to get this cheese dip for class events. I loved it so much! This recipe is as close as I've had, and I've tried many! I made some tonight. I left out the salsa and used a can of Hot Dog chili, as it has the texturized vegetable protein like the original has.

You use powdered coffee creamer. I live in the town that has this restaurant and this tastes exactly like it!

I grew up in Conway, Arkansas and eating at Stoby's was a regular trip to town. I moved to Seattle about 5 years ago and have missed having Stoby's Cheese Dip ever since. This is pretty close and tasted good. I would definately leave out the salsa and I will probably try it with about half the chili next time. I used a whole can this time.
