2 shallots

2 garlic cloves diced

1 quart chicken or veggie broth

1 cup course ground cornmeal

2 ounces parmasan

1 1/2 teaspoons salt

1/4 teaspoon pepper

2 red bell peppers roasted, peeled, and seeded

2 tablespoons red wine vinegar

2 tablespoons water

2 tablespoons olive oil

1 - 2 canned chipotle chiles

2 tablespoons cilantro chopped

salt to taste

Toppings:

1/4 cup feta cheese crumbled

1 avacado, cubed

10 cherry tomatoes quartered

1/4 cup pumpkin seeds toasted
