Summer Squash Bake

Ingredients

3 cups yellow summer squash

2 tablespoon water

1/2 cup green bell peppers finely chopped

1/2 cup onions finely chopped

1/2 cup pecans chopped

1/4 cup mayonnaise

2/3 cup cheddar cheese divided

1/2 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon black pepper


Directions

Place squash and water in a 3 quart microwave/bake safe dish. Cover and microwave on high for 5 minutes or until crisp-tender, drain well. Stir in green pepper, onion, pecans, mayonnaise, half of the cheese, sugar, salt and pepper. Cover and bake at 350 degrees for 20 minutes. Sprinkle with remaining cheese. Bake uncovered for 5 more minutes or until cheese is melted.
