Susan's Christmas Coconut Surprise

This is my husband's favorite memory of Christmas in his home.

Ingredients

2 12-oz bags Flaked Coconut

1 16-oz tub Fruit Cake Mix

2 Cups Pecans chopped

2 cans Eagle Brand Sweetened Condensed Milk


Directions

Preheat oven to 350F. Mix all ingredients together in a large bowl and press firmly into a Tube Pan. Bake for 45 - 50 minutes. Let cool completely before turning out onto plate then cover with plastic wrap. Refrigerate for at least 24 hours before cutting.

I am someone who loves fruit cake and this one intrigued me. With only four ingredients and so easy to put together I had to try it. Needless to say, it turned out absolutely delicious. I did increase the fruit cake mix to 2 lbs. instead of 1 lb. and it still came out fantastic. Thanks for sharing this recipe.
