Tartar Sauce

Ingredients

2 teaspoons French Dijon Mustard

1/2 cup Mayonnaise

1 tablespoon chopped sour pickles French cornichons

1 teaspoon capers, drained and coarsly chopped

1 tablespoon parsely, chopped or mix of parsley, minced chives, and fresh tarragon


Directions

Mix mustard and mayonnaise. Stir in pickles, capers and parsley. Season with Salt and pepper. You can use finely chopped shallots or white onions in place of the 1/4t juice. Finely chop the 2 T capers, 2 T olives, 2T gherkins and 1T parsley before measuring. Fold all of the ingredients into 1C mayonnaise and serve cold. Serve with fried fish or cold seafood. NOTE: This is a classic recipe created by Oscar of The Waldorf Hotel many years ago.
