Tequila-Lime Shrimp

Ingredients

1/2 stick margarine

2 tb olive oil

2 Garlic minced

1 1/2 lb shrimp shelled

3 tb Tequila

1 1/2 tb Lime juice

1/2 ts Salt

1/2 ts Chili powder

4 tb cilantro Coarsely chopped fresh


Directions

Pat shrimp dry with paper towels. Heat margarine and oil in a large skillet over a medium heat. Add garlic and shrimp; cook about 2 minutes, stirring occasionally. Stir in tequila, lime juice, salt, and chili powder. Cook 2 minutes more or until most of the liquid is evaporated and shrimp is pink and glazed. Add cilantro. Serve over hot, cooked rice, garnished with lime wedges. We loved this! So fast and easy, great flavor, it is now one of our favorites! Great summer dinner on the grill with the shrimp marinated a bit before while your in the pool. Great with potato salad.

Everyone loved this. I served it with pineapple fried rice.

Nice core recipe. I had to add more ingredients for more flavor. I added two Roma tomatoes and a Serrano pepper. Also I put more chili powder than asked for. Turned out very good. :)
