Tex-Mex Fiesta Chicken Casserole

A great quick and easy dish that can be anywhere from mild to fire hot, depending on your taste. ENJOY!

Ingredients

1 pound ground chicken

flour tortillas

2 cups shredded cheese; colby-jack

1 can refried bean 15 oz

1 can diced tomatoes 15 oz preferable Rotel with the green chilies in it

2 cans chopped green chiles 4.5 oz. Old El Paso is best.

1 packet taco seasoning brand and spiciness optional. use to taste

1 medium White onion finely chopped

1 can olives minced

salt and pepper; to taste

Tabasco sauce; to taste (optional)

4 whole jalepeno peppers (optional)


Directions

Preheat oven to 350 brown ground chicken mixed with onion, full packet of taco seasoning and tabasco to taste (optional). drain and set aside. fully drain tomatoes, green chiles and olives In an 8x8 Glass Pan: layer the bottom of the pan with a flour tortilla. spread refried beans over tortilla then top with another flour tortilla. spread green chilies and tomatoes over that. cover with browned ground chicken mixture. top with tortilla, then minced olives, then cheese. garnish with optional jalepenos before baking. Bake 20-30 minutes at 350 degrees. Cheese should be melted, jalepenos should be wrinkled and corners of pan should be bubbling. Let cool for 5-10 minutes, serve and enjoy!

Almost everything in this recipe is optional and/or changeable. If you want it spicer, user more tobasco, or a hotter taco seasoning. If you want it milder, use half a pack of taco seasoning and no tobasco. Old El Paso Chopped Green Chiles are mild, and have almost no spice to them. The spanish food aisle also has medium and hot versions if you want to kick it up a bit. [I posted this recipe.]
