rind together 6-8 red chillies ,jeera powder ,dhania powder, garlic , ginger, lemongrass, coriander stems, shallots, lemon zest and some salt with oil .. make a smooth paste .. Heat little oil in a Kadhai, add sliced onion and sauté for a minute. Add some paste and fry till the oil leaves the masala. Meanwhile blanch all the veggies, should be very crisp . Reserve some water . Add coconut milk and 1 stem lemongrass to the paste and simmer. Do not boil . Add little coconut sugar . Check salt . Add veggies towards the end and simmer for few minutes. Enjoy it hot with jasmine rice .
