Thai Style Green Curry

Ingredients

1 1/4 pounds Chicken breast

1 Lime

1 large Green pepper

1 Onion

Collard/Mustard greens

3-4 tablespoons Olive oil

1 heaping teaspoon Green curry paste

1 teaspoon Shrimp paste

1/4 cup Fish sauce

1 13.5 oz can Coconut milk

1 heaping tablespon Peanut butter


Directions

Marinate chicken ~30 minutes, until pink is mostly gone. Cut up chicken in 1 ½” pieces. Zest lime, mix with chicken. Squeeze lime juice onto chicken and mix well, kneading with your hands. Mix oil, green curry paste, shrimp paste. On medium heat, heat up oil mixture until hot, add chicken. Keep turning until pink is gone. Reduce liquid by pulling chicken away from middle to evaporate. Add vegetables and cook until done. Add coconut milk (SHAKE CAN FIRST) Add peanut butter, mix in. Add fish sauce, mix in. Let simmer for 15 min. on low for better flavor.
