Tilapia over Spinach with Garlic Wine Butter Sauce

Ingredients

2 (4oz.) tilapia filets

1 teaspoon flour

1 egg white

lemon pepper for dusting on fish

1/4 cup bread crumbs

1 teaspoon Olive oil (divided)

1 (10oz) package fresh spinach

1 tablespoon butter

1/4 cup white wine

2 teaspoons garlic (divided)


Directions

Sprinkle tilapia with lemon pepper and dust with flour. Dip in egg white, then coat with bread crumbs. Spray a fry pan with cooking spray, then heat to med-high. Add 1 t. olive oil and roll to coat pan. Fry fish 3-4 min. on each side or until nicely browned. Meanwhile, heat 2 t. olive oil in a large saute pan. Add 1 t. garlic and spinach. Toss to coat. Cook for a couple of minutes or until spinach is wilted. Salt and pepper lightly. Divide spinach onto 2 plates and top with fish. In the fish pan, add 1 T. butter, 1 t. garlic and 1/4 c. wine. This turned out to be delicious. I beat up the egg yolk and 1\2 of egg white and stirred it into the as it saut?ing spinach. I cooked 1 1\2 cup of red quinoa (rice, barley, or alternate grain would also work) and stirred it into the spinach to make the bed for the tilapia. A complete and attractive meal.

I used coconut oil to fry the tilapia in, which gave it a very subtle sweetness which really complemented the crispy coating of the breadcrumbs. It didn't taste "coconut-ty" at all. Tilapia is a pretty bland fish so this really made a difference in enhancing the flavor. Both my kids loved it. It's definitely going in the regular rotation.
