Toasted Ravioli with Fresh Tomato-Basil Salsa

Ingredients

1 9-oz package

1 pound peeled and seeded

1/2 cup loosely packed

2 tablespoons chopped

1/4 teaspoon


Directions

Cook ravioli according to package directions. Rinse with cold water until cool; drain well. Preheat oven to 375°. Grease a baking sheet. Combine bread crumbs, cheese, basil, oregano, and pepper in a medium bowl. Beat egg whites lightly in a shallow dish. Add ravioli and toss to coat. Transfer ravioli, a few at a time, to bread crumb mixture; toss to coat. Arrange on prepared baking sheet. Bake for 12-14 minutes, until crisp. Meanwhile, prepare salsa. Combine remaining ingredients in bowl of food processor and pulse until finely chopped, but not smooth. Serve with ravioli.
