Tomato Basil Soup

Ingredients

4 cups Canned whole tomatoes Crushed

2 Cups Tomato juice

2 Cups Chicken Stock

14 Leaves Basil fresh

1 Cup Heavy cream

1/4 Pound Sweet butter, unsalted

Salt and pepper to taste


Directions

Combine tomatoes, juice and stock in saucepan. Simmer 30 minutes. Puree, along with the basil leaves, in small batches in blender or with handheld blender in pot. Return to saucepan and add cream and butter, while stirring, over low heat.
