1/4 cup plus 2 tablespoons sweetened cream of coconut stirred

5 large egg whites

1 1/2 teaspoons pure vanilla extract

1 1/2 teaspoons pure coconut extract

2 sticks unsalted butter room temperature

1 1/4 cups granulated sugar

3 large eggs

1 1/2 cups sweetened shredded coconut

1 stick unsalted butter cut into pieces

3/4 cup granulated sugar

1 1/4 cups heavy whipping cream

1 tablespoon cornstarch

1 tablespoon water

1 teaspoon pure vanilla extract

Pinch of kosher salt (use can use regular salt)

8 ounces cream cheese room temperature

1 stick unsalted butter room temperature

2 teaspoons pure coconut extract

1 teaspoon pure vanilla extract

1 tablespoon cream of coconut

4 cups powdered sugar

2 to 3 cups sweetened shredded coconut

Toasted coconut for the top optional
