Turkey Bacon and Vegetable Saute

Ingredients

1 head Broccoli cut in pieces

1 ea Zucchini cubed

2 small Crookneck squash cubed

4 slices Turkey bacon chopped

6 cloves Garlic minced

10 Green Olives With Pimentos chopped

2 Marinated artichoke hearts chopped

1 8-oz can Garbanzo beans

1 16-oz can Tomato (diced with italian spices)

1 teaspoon Salt

2 teaspoons Italian spices

1 tablespoon olive oil

1 bunch Scallion chopped

3 cups Whole Wheat Pasta cooked

3 tablespoons Parmesan cheese grated

1/4 teaspoon Pepper crushed


Directions

Put olive oil in a large saute pan. When it gets hot, add garlic and stir until aromatic. Add turkey bacon and scallions and cook aprox. 2 minutes. Add broccoli, zucchini, and crookneck squash, and stir fry until broccoli is bright green. Add olives, artichoke hearts, tomatoes and garbanzo beans. Sprinkle on italian spices, salt and pepper. Cover and simmer aprox. 10 minutes. Serve over whole wheat pasta, and sprinkle with parmesan cheese.
